This month we have Triple Lemon Cupcakes - Lemon cupcake, Lemon curd filling, and Lemon Cream Cheese Frosting!! My official taste tester, aka my husband, says they taste like Lemon Meringue. He also says they have 'serious' lemon flavor. There seems to be a debate at work between several coworkers whether they are too lemony...or perfect (bring on the lemon!). I have decided to put a caution label on the box so no one is too surprised by the flavor. I, myself, like strong lemon flavors too, but ultimately it comes down to the general consensus...or does it?
Also, this month, we have Carrot Cake Cupcakes. This is a recipe that has been handed down from family. It's very much my 'go-to' recipe for any occasion that requires a dessert - whether it's cupcakes or a 6 layer cake. It's such a fresh, flavorful cake made with fresh shredded carrots and crushed pineapple. The cream cheese frosting is also my 'go-to' cream cheese recipe (but with a 'super-secret' added ingredient). I have been told by people that don't like frosting that they could eat my frosting with a spoon. Okay. Who wants a frosting shot?!
